Chief Clinical Dietitian

Laura has an amazing team of dietitians who share the same devotion and passion that she has to the field of nutrition; they enjoying serving “the young at heart” population.  Growing up as a child, Laura always thought she would become an elementary school teacher. Although she does not work in a school with children, she still considers herself an educator of nutrition for the adult population. She attended the University of Rhode Island and earned a Bachelors of Science in Dietetics, and continued on to SUNY Stony Brook where she completed a dietetic internship and obtained a Master of Science degree in Healthcare Policy and Management with an emphasis in nutrition.  She shared, "Twelve years ago I started my career as a dietitian working with 'the young at heart' and they truly captured my heart!  I couldn’t think of doing anything else because I love what I do!  Not only do I get to touch the lives who have touched so many, but they also touch mine as well!  It’s from a simple hello, a smile, to an impromptu conversation with a word of advice or encouragement that lifts my spirits! Meeting the nutritional needs of someone with an illness may seem like a daunting task, but here at The Riverside, our team works together to make the most challenging nutrition task look easy!  We strive to make your stay feel like home.  There are many diets offered to ensure each resident receives proper nutrition and hydration on a daily basis, meeting all different types of needs, which include, but are not limited to the following: diabetic, dairy-free, gluten-free, renal, and low fat/cholesterol and tube-fed residents. Once a week we have a 'Breakfast Club' located on our penthouse floor where residents get to enjoy scenic views of the city, conversations with friends, waitress service, and a meal made to order!"
